A busy service bar goes through more cotton than the kitchen behind it, and almost none of it is dirty in the way people picture. Bar towels come off a shift carrying sugar, citrus oil and concentrated colour, and those three things behave differently in a wash than food soil does. Treating them like kitchen cloths is why they go sour.

What actually ends up in a bar towel
Run through a single shift and the list is short and strange.
Beer is the bulk of it. Spillage off the drip tray, foam wiped off a counter, the pull of a line, and the rinse water underneath the glass rinser. Beer is mostly water, but it carries residual sugars, proteins from the malt and a little hop resin, and it is the sugar that stays in the cotton.
Simple syrup, agave and liqueurs are the concentrated version of the same problem. A cocktail station gets through far more sugar per wipe than the beer taps do.
Citrus is next. Every time a peel is expressed over a glass, the oil goes somewhere, and a fair share lands on the rail and gets wiped up.
Then there is colour. Grenadine, bitters, red wine, campari style reds and anything with a blue curacao in it are all dye at working strength, and they go straight into white cotton.
Sugar is the problem, not the beer
A towel that is wet with beer and hung out to dry within the hour is fine. A towel wet with beer that sits folded in a warm heap is not, and the difference is entirely the sugar.
Sugar in damp cotton, held somewhere warm, starts to break down. What you get is a slick feel on the surface of the cloth and a sour smell that is unmistakable once you have met it.
That slick film is the reason bar towels feel different from every other cloth in the building when they have been left. A kitchen rag left wet smells stale. A bar towel left wet feels wrong in your hand before you even lift it to your face.
It matters because the film is not simply on the surface. Sugar has gone into the fibre in solution and then dried there, and a short cold cycle rinses the outside and leaves the inside.
The fix is warm water and enough wash time for the sugar to dissolve back out, which is the opposite of what most people do. The instinct with a smelly towel is to add rinses, and rinses do very little here.
The real fix is upstream. Towels get wrung out and hung open at the end of service rather than dropped into a closed bin, and a bin with air moving through it beats a sealed one every time.
Citrus oil, bitters and the colour problem
These three each fail a normal wash for a different reason, which is worth knowing before you decide the towels are finished.
Citrus oil is the quiet one. Expressed peel throws a fine mist of oil, mostly limonene, and oil is not water soluble. It sits in the cotton, it oxidises over days, and it turns into a faintly rancid note that people blame on the beer.
Oil needs a detergent with real surfactant strength and water warm enough to keep it mobile. A cold wash leaves it exactly where it was and it builds up wash after wash until the cloth smells before it is even used.
Bitters are concentrated botanical tinctures in high proof alcohol, and they are made dark on purpose. They behave like a dye rather than a spill, and once the alcohol flashes off the colour is in the fibre.
Grenadine is worse because it is sugar and colour together, so it sets and it sticks. Flush it with cold water while it is still wet and most of it leaves. Let it dry and you are pulling colour out of cotton, which is slow work.
None of this is a reason to bleach everything. Repeated chlorine bleaching weakens cotton at the fibre level and a bar towel that has been bleached hard every week goes thin and starts tearing along the hem while it still looks white.
Why bar towels need their own wash
The temptation is to throw everything cotton into one load at the end of the night. It is the single most expensive habit in the building.
Kitchen cloths carry animal fat and cooking oil. Bar towels carry sugar and citrus oil and colour. Wash them together and the grease from the kitchen side comes off in the water and redeposits across everything in the drum, because there is more soil in that load than the detergent can hold.
A bar towel with a film of kitchen grease in it does not absorb. It smears. That is the end of its usefulness even though it looks clean and came out of the machine white.
Colour is the second reason. One grenadine soaked cloth in with a set of white glass polishing cloths tints the lot, and a pink polishing cloth is a cloth nobody will pick up again.
Weight is the third. Bar towels come off a shift saturated, and saturated cotton is heavy. A drum that looks half full by volume can be at capacity by weight, and an overloaded drum does not tumble, which means it does not wash.
So the sort is simple. Glass cloths on their own, bar towels together, kitchen cloths separately, aprons with the kitchen side.
What fabric softener does to a bar towel
A bar towel has exactly one job, which is to move liquid off a surface and hold it. Everything else about it is secondary.
Fabric softener works by depositing a thin waxy film on the fibre, which is what makes fabric feel soft and what stops it feeling stiff off the line. That film is water repellent.
Put softener through a load of bar towels and they come out feeling lovely and they stop picking up liquid. The water beads and pushes ahead of the cloth instead of going into it, and the bar staff go through twice as many towels doing the same work.
The effect is cumulative. One wash with softener is recoverable with a couple of hot washes and a cup of white vinegar. A year of it is not, and those towels are finished as towels even though the fabric is sound. Dryer sheets do the same thing by a different route, so they are out as well.
If the towels are coming out stiff, the cause is almost always detergent residue or mineral deposit rather than an absence of softener, and the answer to both is less detergent and more water rather than a softener bottle.
Drying and the rotation
Cotton that comes out of a dryer at ninety five percent dry and gets folded into a stack will be fine. Cotton at eighty percent dry will sour in the middle of the stack by morning.
Terry hides moisture well. The loops feel dry to a hand while the woven ground underneath is still holding water, so a squeeze in the middle of a folded stack tells you more than a touch on the outside does.
Do not fold bar towels warm and put them straight in a closed cupboard, because warm cotton keeps giving off moisture for a while after it leaves the machine and a closed door traps all of it.
Keep enough sets moving that a wet towel never has to go back into service. The moment the bar runs short, somebody reaches for a damp one, and a damp towel spreads more than it lifts.
Retire them honestly. When a bar towel has gone thin enough to see light through, or stays faintly sour after a proper hot wash, it becomes a floor rag and stops being a bar towel.
Aprons, rail cloths and the rest of it
Everything else the bar generates has its own quirk and none of them belong in with the bar towels by default.
Rubber backed rail mats and drip mats are not laundry. They want a hose, a brush and a long air dry, and putting them in a drum with cotton is how a rubber backing cracks and sheds.
Bar runner cloths, the long absorbent strips that sit on the rail, are dense and slow to dry, and they hold sugar longer than anything else on the list. They deserve a hot wash on their own.
Microfibre glass cloths should never share a load with cotton, because microfibre grabs cotton lint and then leaves it on the glassware, which defeats the entire point of polishing.
Wash microfibre without softener and dry it low. High heat melts the fibre tips, and a melted microfibre cloth is a smearing cloth.
The Cincinnati part
The Ohio valley summer is the specific local pressure on this. Warm, still, heavy air is exactly the condition that turns a heap of sugar soaked cotton from a laundry job into a smell problem, and it does it in hours rather than overnight. A bin of bar towels left in a back room through a July afternoon is a different job by evening than it was at close.
That argues for one habit above all the others here, which is wringing and spreading rather than piling. Air moving across wet cotton buys time, and time is the only thing standing between a normal wash and a sour one.
Water in this part of Ohio carries enough mineral to matter, and mineral interacts badly with the sugar and oil load a bar produces. Hardness ties up part of the detergent dose before it reaches the soil, so the wash that should have lifted the citrus oil only half lifts it, and the residue builds through the week.
Winter creates the opposite trap. A back room that is cold rather than heated seems like a good place for wet cotton, and it is not, because cold cotton simply stays wet. Nothing is dissolving, nothing is drying, and the sugar is still there waiting for the room to warm up. Cold slows the smell down and it does not prevent it.
Where a saturated load actually washes
Wet cotton off a bar is heavy, and weight is what stops a home drum from tumbling and therefore from washing at all.
