A bakery makes more laundry in a week than most people expect, and almost none of it behaves like household wash. Bakery laundry arrives carrying flour, raw dough, butter, sugar syrup and chocolate at the same time, and each of those wants a different treatment. Treat it all like ordinary soil and the whites go grey by the second month.

What makes bakery laundry different from ordinary soil
Most workwear carries one kind of soil. A baker’s apron carries four at once, and they work against each other.
Flour is the first and it is a dry powder that turns into paste the instant it meets water. Dough is that paste already made, with the gluten developed, and it grips a weave the way sizing does.
Fat is the second layer. Butter, shortening, pan grease and oil do not dissolve in water at all, and they need a surfactant and some warmth before they will lift.
Sugar is the third. Syrup, glaze and caramel are water soluble and easy on their own, but they dry tacky and hold everything else against the cloth.
Protein is the fourth, from egg wash and custard, and protein sets hard in heat and stays.
So with bakery laundry the order of operations matters more than the detergent does. Get the first step wrong and nothing later in the process fixes it.
Brush the flour off before anything gets wet
The first instinct with a floured apron is to rinse it under the tap. That is the most common mistake in a back room, and it is the one that costs the most.
Dry flour sits on the surface of the weave. Shake the garment out hard, slap it against the side of a bin, or run a stiff dry brush across it, and most of it leaves the cloth entirely.
Wet that same flour and you have made a thin batter. It sinks between the yarns and dries as a stiff pale film that no amount of ordinary washing will pull back out.
Do the shaking outside or over a bin rather than at the sink, because flour rinsed down a drain sets in the trap.
Aprons should come off, get shaken out, and go into a dry bin. Not a damp one, not on top of wet bench cloths, and not into a bucket.
The same goes for tea towels used to dust a bench or flour a couche. Shake them out before they go anywhere near water, and half the bakery laundry problem is already solved.
Why hot water turns dough into glue
Starch gelatinises in hot water. That is exactly what makes a roux thicken, and it is the last thing you want happening inside a piece of cotton.
A dough smear hit with hot water swells, sets and bonds to the fibre. Once it has done that it is a film rather than a stain, and it will crack and flake for the rest of the garment’s life.
Cold water is the rule for the first pass on anything carrying dough, batter or egg. Cold loosens, hot sets, and that single sentence covers most of the failures.
Soak cold for twenty minutes or so, then work the softened dough out with a thumbnail or the back of a spoon before the garment goes in the machine.
Egg wash behaves the same way for a different reason. Egg protein coagulates in heat, and a hot wash cooks it into the weave where it stays as a pale yellow shadow you can see against the light.
Once the starch and the protein are out, warmth becomes useful rather than harmful, because warmth is what lifts the fat. That is the whole argument for doing it in that order.
Butter, shortening and the grease that hides
Grease has a trick to it. While the fat is warm and liquid the mark is dark and obvious, and once it cools the mark can look as though it has gone.
It has not gone. It has gone clear. It reappears after the wash, and it reappears much worse after a dryer, because heat oxidises fat and turns it a yellow brown that sets permanently.
So treat grease before the garment goes in even when you cannot see it. The front panel of a working apron is greasy across the whole width, not in neat spots.
Work a small amount of dish detergent into the fabric with a fingertip, give it ten minutes, then wash as warm as the garment label allows.
Warm water is what lets a surfactant get around a fat molecule and carry it away. A cold wash on a greasy apron does almost nothing, which is why aprons washed cold come out smelling clean and feeling slightly waxy.
Check every garment before it goes near a dryer. A fat mark that survived the wash is still removable, and a fat mark that has been through a hot dryer usually is not.
Chocolate and fruit filling, which are two stains at once
Chocolate is fat and pigment together, which is why one approach never clears it.
Scrape the solid off first, treat the fat with detergent worked in by hand, then wash cold. If a brown shade is still there afterwards, that is the cocoa pigment, and pigment wants an oxygen based soak rather than more scrubbing.
Fruit filling is sugar, acid and dye. Cherry, raspberry and blueberry are the three that leave a mark you will still see in a year.
Rinse a fruit stain from the back of the fabric with cold water, pushing it out the way it came in rather than driving it further through the weave.
Never put hot water on fruit. Sugar and fruit pigment both set with heat, and a hot rinse is how a splash becomes part of the apron.
Caramel and toffee are sugar that has already been cooked once. Soak them in warm water until the sugar redissolves, which it will given time, and then wash normally.
Why bakery laundry turns white coats grey
Whites in a bakery rarely fail from one dramatic stain. They fail from a general dulling that arrives slowly and that nobody can point at.
Three things cause it. Fine flour dust held in suspension that settles back onto the cloth during the wash, fat residue left behind by under washing, and detergent and mineral build up that never rinses clear.
Overloading is the single biggest driver. A packed drum gives the soil nowhere to go, so it is stirred around and redeposited rather than carried out with the water.
Too much detergent does the same thing from the other direction. Undissolved detergent and any softener hold fine particles in the fibre and leave whites looking flat and slightly grey.
Washing coats in with printed tees and coloured aprons is the third habit to break, since it dulls white cotton long before anything runs.
Whites want their own load, a drum with room to move, a reduced detergent dose and an extra rinse. That is most of what keeps bakery laundry looking like it belongs at a front counter.
Aprons, towels and the pile a week makes
A small shop underestimates its own volume badly. Two bakers on a morning shift will go through several aprons each if they change when the front gets wet, and the front always gets wet.
Then there are bench cloths, proofing cloths, oven cloths, polishing towels for trays and glass, and rags for wiping down mixers and benches.
Proofing cloths are their own case. Heavy linen, deliberately floured, and they are meant to keep that flour seasoning. Shake them out, hang them to dry, and wash them rarely rather than weekly.
Oven cloths take scorching and grease together. Check them for thin patches when they come out of the wash, because a cloth with a burnt through spot has finished its working life.
Bar mops and towels want a hot wash and no fabric softener at all, since softener leaves a coating on cotton and a coated towel stops absorbing.
By Friday a two person shop can have a bin that will not go through a domestic machine in fewer than five or six loads, and that is where an entire evening disappears.
The Inkster part
Southeast Michigan works against a bakery from both ends of the calendar, and the laundry is where you notice it first.
In summer the air is humid enough that a bin of damp aprons left overnight comes back sour by morning. Flour paste and butter in a warm damp cloth turn quickly, and the smell gets into the weave rather than sitting on it. The fix is dull and it works: shake aprons out dry, keep the bin dry and open rather than sealed, and wash before the next morning’s bake rather than at the end of the week.
Winter reverses the problem. A bakery in January is the warmest, dampest room on the street, and the moment a rack of washed towels comes into that air it stops drying. Anything hung to dry in a proofing room or near an oven picks up steam and stays damp in the middle. Dry it properly with real heat and air movement, then fold it, because folding a towel that is still slightly damp is how a clean towel starts to smell.
Hard water is the third factor and it is the one bakers notice last. Mineral in the water combines with flour starch and leaves a dull film on white cotton that reads as grey rather than as a stain, and it builds a little more with each wash. Cutting the detergent dose, adding a rinse and putting half a cup of washing soda in the wash addresses it, and it makes far more difference to a stack of bakery laundry than switching detergent brands does.
Where a week of aprons actually fits
Bakery laundry is a volume problem before it is a stain problem, and volume is the one thing a domestic machine cannot offer.
