White cotton going grey is not a stain and it does not respond to being treated like one. It is soil that came off the load in the wash, stayed suspended in the water, and settled back down onto everything evenly. Fix the wash and the grey stops, and most of what is already there can be pulled back out without bleach.

Grey is redeposited soil rather than a mark
The test for going grey is where it sits. A stain has an edge and a shape. Grey has neither.
A garment that has dulled has shifted tone across its whole surface, including places nothing ever touched, like the inside of a back panel.
What happens is that detergent lifts soil off the fabric and then has to hold it in suspension until the water leaves the machine.
If the suspension fails, or if the dirty water never fully drains away, that soil comes back down onto every fibre it can reach.
It lands evenly, which is why the result reads as a change of colour rather than a mark.
This also explains why bleaching a dull shirt gives such a short lived result. The soil is still being deposited every wash, so the shirt dulls again within a month and the fibre has taken a beating on top of it.
Why an overloaded machine causes going grey
A packed drum is the most common single cause and the easiest one to fix.
Clothes clean by moving through water. In a full drum they do not move, they compress, and compression pushes dirty water out of one garment and into the next.
The rinse has the same trouble. Fresh water cannot travel through a solid mass of wet cotton, so the last of the soil never leaves the load.
A load should look loose before the water goes in. A hand pushed down into the drum should reach the bottom without force.
Two smaller loads are quicker in practice than one packed one, because the packed one has to be run again.
This is why whites going grey shows up first in households doing one big weekly wash rather than several smaller ones.
Too much detergent does the same thing
More detergent does not mean more cleaning, and past a point it means measurably less.
Detergent has to be rinsed out. Excess creates a foam cushion that soaks up mechanical action, so the load bounces in suds instead of being worked through water.
Whatever does not rinse out stays behind as a film, and that film is slightly tacky. It catches soil in the next wash and holds on to it.
The result is exactly the dullness you were trying to avoid, arriving faster than it otherwise would.
Dose by load size and by how dirty the load actually is, and treat the markings on the cap as a maximum rather than a normal serve.
If your whites feel stiff or smell faintly of detergent when dry, you are using too much, and that is the same problem that going grey comes from.
Hard water makes it worse
Hard water carries dissolved calcium and magnesium, and those minerals react with the cleaning agents in detergent.
The reaction produces an insoluble curd. It does not rinse away, it settles onto fibres, and it is greyish.
That deposit builds wash after wash, which is why cotton in a hard water area gets duller and stiffer over the same stretch of time.
It also ties up part of your detergent before that detergent reaches any dirt, so a hard water wash is working with less cleaning power than the dose on the cap suggests.
The wrong response is more detergent, which makes more curd. The right one is a softener or half a cup of washing soda in the wash, which deals with the minerals so the detergent can get on with its job.
An extra rinse helps as well, because most of what causes going grey either leaves in the rinse water or never leaves at all.
Oxygen whiteners against chlorine bleach
Sodium percarbonate is the usual oxygen based whitener, sold as a plain powder. In water it releases hydrogen peroxide, which lifts soil by oxidising it.
It wants warmth and time. In cold water it does very little, and in hot water with an hour to work it does a great deal.
It is safe on colours and on most fibres, so a whole mixed load benefits rather than only the whites.
Chlorine bleach works faster and harder, and the price is the fibre. It weakens cotton with repeated use, it destroys elastane outright, and it reacts with body soil residue in a way that can leave a permanent yellow.
Chlorine also does nothing about the cause. A shirt bleached white on Monday is going grey again by the end of the month if the wash is still redepositing soil.
Oxygen whiteners are slower and they suit the actual problem better, because the problem is soil and oxidation removes soil.
Optical brighteners in detergent are a third thing entirely. They deposit a fluorescent dye that makes fabric look whiter in daylight without removing anything, which masks a garment going grey rather than fixing it.
Wash whites together with room to move
Sorting is the practical half of stopping whites going grey. Whites go with whites, and that includes checking for a dark trim, a printed label or a coloured stitch line.
Keep the heavily soiled items out. Work clothes, kitchen cloths and anything greasy put far more soil into the water than the rest of the load can carry.
Wash whites warm or hot where the fabric allows it, because temperature does a large part of the work that mechanical action cannot.
Give the load room. Half to two thirds of the drum is the target for whites specifically.
Run a longer cycle rather than a hotter one if you are unsure, since time is the gentlest of the four washing factors.
Make an extra rinse standard for white cotton and leave it that way.
Bringing back whites that have already dulled
Start with a long soak rather than another wash. Hot water, a scoop of oxygen whitener, and four to eight hours.
Use enough water that the items float and can be stirred. A soak in a packed bucket redeposits soil in exactly the way the machine did.
Stir it once or twice during the soak, then wash normally with a normal dose of detergent and an extra rinse.
Expect to repeat it. Two or three rounds spread over a few weeks pull back more than one heroic attempt.
Adding washing soda to the soak helps in a hard water area, since it deals with the minerals holding the deposit onto the fibre.
Some items will not come back. Poly cotton that has picked up dye from a coloured item is dyed rather than dirty, and fabric worn thin lets the shadow of whatever is behind it show through, which reads as grey and is really transparency.
The Arlington part
Hard water is the main reason whites here end up going grey, and it is worth treating as the default rather than a possibility. North Texas supply is mineral rich, and every wash leaves a little more deposit than the same wash would in a soft water area.
The summer is hot and humid, which changes the soil load going into the machine. Sweat and body oil enter clothing at a far higher rate for months at a stretch, and oil is the part that carries and holds fine soil against the fibre.
That combination is the awkward one. Oily soil needs warm water and a full working dose of detergent to lift, and hard water is quietly taking part of that detergent out of play before it reaches the dirt.
Storm season adds mud and grit, and the honest answer there is separation rather than technique. A muddy load run in with whites will dull them in a single wash, so muddy things go through on their own and get shaken out or rinsed off outside first.
Where whites get the water they need
Grey is a rinsing problem before it is anything else, and rinsing is a question of volume.
